Here’s one recipe I use that always wows peeps – made in just a few minutes … adjust ingredients accordingly.
4 or 5 ripe Avocados – cut in half, scoop flesh into a big bowl (save shells for serving guac)
2 tsp diced red or white onion
2 garlic cloves crushed and diced
1/4 tsp cumin
1/4 tsp cayenne pepper
1/4 cup thawed frozen corn
1 + generous Tbs lemon juice (adjust – I love a lot of lemon or lime)
1/8 cup favorite salsa (this covers tomatoes, peppers, onions, garlic)
Pinch of salt
Hot sauce if you want it to make you cry a little
Cilantro for garnish
Mash avocado so it is somewhat chunky. Add other ingredients and gently fold it all together – Use the halved avocado shells, fill them with guacamole for individual portions, and serve with favorite chips. Sprinkle with love — of course.
Use guac as a spread for tostados, nachos, dips, or on sandwiches …
This will easily serve 8 – 10 people. Have fun! Avocados are good4U
